So, it occurred to me last weekend to ask this, and I forgot until just now.

With the near-catch of the WSB, I realized I have no idea how to clean Salmon, Halibut, WSB, and probably many other fish I might catch. I am the type that hates to waste anything I catch and kill. I'd like to see it done right. Halibut looks relatively straightforward, but it'd be nice to see it at least once.

Is there a place in the santa cruz area that's open on Saturday/Sunday afternoons where I could pay someone to clean and fillet the fish? Bonus if I can watch them do it. I'd hate to do a butcher job on my first catch of those.

Thanks for any advice!

Of all the problems to have!  :smt044  Yes, youtube showed me a lot of how to fillet these kinds of fish.  But they are actually pretty easy to deal with. Halibut kind of have a built in map to fillet even  :smt044 WSB, easy to steak, fillet, etc.  Not a lot of salmon experience, but I filleted mine and it came out good, just some extra bones.

WSB, easy to steak, fillet, etc.  Not a lot of salmon experience, but I filleted mine and it came out good, just some extra bones.

Never done WSB, but I'd have to imagine it's similar to salmon.

Youtube can only go so far for a deaf person. Try watching instructional videos with no sound. It's rather difficult to tell whether what you see is all you need to know, or if there's stuff being spoken to guide you in knowing how to do it properly.

So yeah I've watched the videos, but it's not really a substitute to seeing it in person and being able to ask questions. If I can't find someone to do it, I'll attempt it myself and hope I do it right haha.

I think the best way to learn would be to buy a book on butchery. There's basically two variations: flatfish (halibut, dabs, sole etc) and round fish (salmon, WSB, long cod etc) I learned in culinary school and the textbooks were quite helpful; pictures and text.

Give me a few days to dig my culinary school books out and I'll PM you.

WSB are easy to fillet.  The only problem is the size.  if you get a 40+lb wsb you need a decent sized knife to not f*** it up.  they steak well but filleting is really easy, then cut the fillets into more managable sizes.

Halibut are probably the most difficult of the fish you listed to fillet, thats because they have 4 different fillets.  But again if you have any knowledge on how to fillet, and a good sharp knife, its not that difficult.  One of the primary problems I see with guys filleting fish is that they don't have a good knife.  If you don't have a good knife you're cutting yourself short.  (Terrible pun)

If youtube won't work for you. We are not deaf, so it is hard for us to understand why it doesn't work. Many videos there, just have music accompanying the video. Another way is to go to your local port and hang around the cleaning station when you may feel people might be coming back from their fishing trip.

It's not that it doesn't work, it's just difficult to tell whether what you see is all you need to know, or if there's more to it. I think the book on butchering Dave suggested is the best solution for me.

Next time you find yourself in such a predicament, call me and I'll clean them for a small fee haha! :-) Best way to learn how to clean a fish (any type, really) is to watch someone do it first-hand. Especially if it's a fish you just caught...because you will likely be paying greater attention.

Haha dude that's a flashback! And I admit I did not do a particularly good job on that ling...plus bad technique with the sawing back & forth motion...you want to cut directionally towards the tail instead of sawing it like a tree branch. Man I just looked at the comments on youtube... :smt044
